Blondie papaya brochettes with kiwi sauce

  • 1 papaya
  • 1 oz of tamarind pulp
  • 1 branch of rosemary
  • Bambu sticks
For the sauce:
  • 4 pieces of kiwi
  • 1 oz of apple vinegar
  • 2 oz of sugar
  • 1 oz of butter
  • 1 oz of white wine


  1. Peel and remove papaya seeds
  2. Once clean, chop papaya and fit into Bambu sticks

For the sauce:

  1. Peel and put kiwis into blender with water until yield puree
  2. Place butter in frying pan at medium heat and add the kiwi puree until it is cooked
  3. ncorporate the vinegar and white wine, mix and let them cooked
  4. Let all ingredients cool off.

To serve:

  1. Place brochettes in a plate, serve kiwi sauce in a ramikin, decorate with an orange and kiwi segment and few mint leaves.
  2. Finally, season brochettes with tamarind pulp
